Here is picture of tonight's supper. Kirsten added rapini, yellow summer squash, zucchini and bacon to the noodles to create a delicious warm casserole type supper.
For many of you Rapini is a new vegetable. It can be eaten raw, steamed, or stir fried but we typically like it best when mixed with other veggies.
Here is a picture of the Rapini being chopped up. It is a nice green veggie in the broccoli and cabbage family. We usually only send it in the first box or two until the broccoli is ready. Most people prefer broccoli but Rapini helps fill the first box or two to kick the season off.
