Upside down Pizza and Fennel

Good Evening to All,

I shared a picture on Facebook of an upside down pizza Kirsten made the other day and promised to share the recipe.

Upside Down Pizza

In a large cast iron skillet with a little oil, brown
    1 lb         Hamburger or sausage
    1 med     Onion, chopped
    1 med    Sweet pepper
    2 TB        Flour
    1/2          Fennel bulb
    1/4 tsp    Garlic, granulated

Mix into meat and heat
    1 - 14 oz can  Tomato paste
    1 - 14 oz can   Water
    1 TB        Basil - fresh or 1 tsp dry
    2 tsp       Sugar
    1/2 tsp   Salt

Top with 2 cups shredded cheese.
Beat the following together and pour over items in pan.
    1 c    Flour
    2       Eggs
    1c    Milk or water
    1 TB Oil
    1/2 tsp    Salt
Bake at 425 for approx 25 - 30 minutes until top is lightly browned.


In addition to the recipe, I also wanted to mention a few ways we use the fennel bulb.  You can find a lot of recipes and ideas by googling it, but it is a pretty versatile vegetable in that it can be stir fried, boiled, steamed, or even shaved and added to omelets and other dishes.  The green top can be used in salads as well.  Fennel is in the same family as dill and anise.  All of these are known for soothing and improving digestion.  This is why at some Indian restaurants they give you fennel seed after the meal instead of a candy.

We planted a fall planting of fennel too so hopefully you will all get it once again this fall.
